In the offer of smoked food, we cannot miss the chicken, usually in the barbecue environment the wings are often used, with different sauces; in this dish we make a variant, using chicken thighs, cutting the tendon so that the smoking and gravity will help us to make a "Lollipop". We add three different sauces to build contrast in flavors: sweet (homemade BBQ), spicy (morita mayonnaise), and fresh one (blue cheese dressing)
Ingredients:
Chicken Lollipops
- Chicken Thighs, 3 pieces
- Cascabel pepper, 2 pieces.
- Chile Ancho, 2 pieces.
- Cayenne pepper, one tablespoon
- Garlic powder, one tablespoon.
- Sea salt, to taste
Homemade BBQ
- Brown Sugar, 2 tablespoons.
- Worcestershire sauce, 2 tablespoons.
- Mustard, 1 tbsp.
- Bee Honey, 2 tbsp.
- Apple Cider Vinegar, ½ cup.
- Ketchup, 1 tbsp
- Cayenne pepper, 2 tbsp.
- Smoked salt, 1 tbsp.
Morita mayonnaise
- Chile Morita, 5 pieces.
- Egg, 2 pieces.
- Lemon Juice of 4 pieces.
- Olive Oil, 200mls.
- Salt, to taste.
Blue Cheese Dressing
- Crumbled blue cheese, 30 grams.
- Mayonnaise (from the previous mixture to the natural one), 3 tablespoons.
- Greek yogurt, ½ cup.
- Worcestershire sauce, 2 tbsp
- Sour cream, 6 tbsp.
- Onion powder, ½ tablespoon.
- Garlic powder, ½ tablespoon.
- Lemon juice, ½ tablespoon.
- Salt, to taste.
- Salt and Pepper, to taste.
Preparation
Chicken Lollipops.
- Wash the thighs, a cut is made to the tendon in the closest part to the end of the bone.
- All chiles, already clean, deveined and without seeds are grounded until obtaining a fine powder.
- The chiles with pepper, garlic and salt are integrated to make a homogeneous Rub.
- We rub the thighs generously and left to rest for 10 minutes.
- In the smoker, already pre heated to 250 °F, place the thighs meat side down, upright.The temperature is sustained between 250 and 275 °F for 40-45 minutes, until the skin is brown and crisp
Homemade BBQ
- Integrate all the ingredients in a saucepan over medium heat, little by little and without stopping mixing until it is homogeneous.
- Once it comes to a boil, cook over very low heat for about an hour until it reaches the desired consistency.
Morita Mayonnaise
- All chiles, already clean, deveined and without seeds are grounded until obtaining a fine powder.
- In a blender, mix the egg, lemon juice and salt and begin to blend.
- Once the previous elements are integrated, the oil is poured in the form of a thread and little by little, without stopping bleanding, until the desired consistency is reached.
- One the mayonnaise is ready, we separate three tablespoons for the blue cheese dressing and add the chili powder to the rest and mix well.
Blue cheese dressing.
- We mix the mayonnaise, yogurt, and sour cream in a bowl.
- Once that mixture is integrated, the rest of the ingredients are added and seasoned to taste. It is put to rest in the refrigerator for 1 hour.

Plate up and serve
- On a wooden board, we place the Chicken Lollipops.
- We pour the sauces separately into three small sauce boats and arrange them on the table.
